BACON ASPARAGUS FRITTATA RECIPE

Everyone around me is still drinking the Keto Koolaid and I’m trying to make recipes that are great for them and tasty for everyone else. This Bacon Asparagus Frittata recipe is a fit for ALL my people.

Easter is around the corner and it means brunch with family and friends. When I think brunch I think eggs. Currently I’m dreaming about Cadbury eggs but don’t worry I didn’t put those in here. My mom used to buy crates on crates of them (of course we have ten kids in our family).

My mom used to hide our Easter baskets in the backyard and we would have to search to find ours. I have such vivid memories of finding my basket and immediately opening the first Cadbury egg (which had already started to melt in the Arizona sun) and devouring it right away.

Prep Time: 5 minutes mins

Cook Time: 15 minutes mins

Total Time: 20 minutes mins

Servings: 6

Ingredients

  • 8 slices of bacon, cut in 1-inch pieces
  • 1 cup asparagus cut into 1/2 inch pieces
  • 2 cloves garlic
  • 10 large eggs
  • 1 cup shredded cheddar cheese
  • 1/4 cup heavy whipping cream
  • 1/4 cup parsley, chopped
  • 2 tablespoons chopped green onions
  • 1/2 teaspoon salt
  • pepper to taste

Instructions

  • Preheat oven to 350 degrees and spray a 9 or 10 inch baking dish with cooking spray. It can be round or square.

  • In a medium skillet, cook the bacon until crispy. With a slotted spoon remove from pan and drain bacon on paper towels. Drain bacon drippings leaving about 1 tablespoon of drippings in the pan.

  • Cook asparagus in reserved bacon drippings for a couple of minutes or until desired tenderness (asparagus will continue to cook in the oven). Add the garlic and cook for an additional minute. Remove from heat and set aside.

  • In a large bowl, add the eggs, 1/2 the bacon, 1/2 the cheddar cheese, cream, parsley, 1/2 the green onions, asparagus, salt, and pepper to preference. Whisk together and pour into prepared pan.

  • Bake for 15-20 minutes or until egg is puffed and set in the middle. If you are using a 9-inch pan it will puff very high but will settle as it cools. Add the remaining cheese for the last couple of minutes of baking to melt. Remove from oven and sprinkle with remaining bacon and green onions. Serve!

      Yes of course

Nice recipe but the 15 minute cook time is laughable. The eggs themselves bake for 15-20 minutes.

  3. Lisa Reply

Just a heads up…. this does not take 20 minutes. It’s more like an hour.

Thank you for the great recipe!
I did it without the cheese (since I didn’t have any) and added kale (since I had some I needed to use) it came out delicious!

This looks yummy! I generally make my frittata in a cast iron skillet as it can go directly in the oven.

FAQs

How do you keep frittata fluffy? ›

Tips for Fluffy Eggs

You can add up to 1/2 cup per dozen eggs. Don't overcook! Overcooking eggs makes them rubbery. When you remove the Frittata from the oven, it will continue to cook, especially if you are using cast iron, which retains heat well.

What's healthier frittata or omelette? ›

But unlike omelets, egg frittatas can serve a family fast. And unlike most egg recipes, a four-serving frittata cooks all at once without any flipping or fuss. Plus, since there's no crust (like quiches), it makes it a healthier breakfast option.

How do you make a frittata not soggy? ›

If meat and vegetables figure into your frittata, cook them in the pan before you add your eggs—and I leave mine ever so slightly underdone. That way, they don't get soggy when they keep cooking in the oven (and I tend to like my vegetables with a little “bite” anyway, but it's a personal preference).

How do you keep frittata from getting watery? ›

To avoid falling into the "too much moisture" trap when prepping your next frittata, always completely drain any fresh ingredients before adding them to your pan. You can also press seemingly damp items like fresh produce between paper towels to absorb — and force out — some additional moisture.

When making a frittata, which ingredient should be pre-cooked prior to adding it to the egg mixture? ›

Tough vegetables like potatoes, squash and onions need to be pre-cooked since they will not have time enough to soften before the eggs are done. Raw meats such as bacon and sausage also need more time and heat to cook through safely, so get them prepped before your other ingredients.

What is the frittata formula? ›

Easy Formula For a Frittata

6 eggs. 1/4 cup heavy cream. 1 cup cheese. 2 cups veggies and/or meat.

What is the difference between a frittata and a quiche? ›

A frittata is partially cooked in a skillet on the cooktop then finished in the oven. It also has a lower egg to dairy ratio making it closer to an open faced omelet than a pie. Quiche has a creamier, custard-like texture due to more dairy and is cooked entirely in the oven.

What makes a frittata so different from an omelet? ›

And, unlike omelets, frittata fillings are mixed in with the eggs in the pan rather than folded in the center. To make a frittata, well-beaten eggs are cooked on the stove in a hot skillet, along with the fillings, for a few minutes until the outer edges are set.

Which is better for weight loss boiled eggs or omelette? ›

Here's the answer. If you're looking to shed some extra pounds, then it's best to have boiled eggs. You don't have to worry about any additional fat or calories from any outside substance other than eggs. However, omelettes are a delightful way to enjoy eggs, and the possibilities for fillings are endless.

How to tell when a frittata is done? ›

Cook the frittata in the oven just until the centre is no longer wobbly and the edges are golden-brown. If still unsure, place a knife into the centre of the frittata. If raw eggs run out, keep cooking. You want the eggs to be just set as the frittata will keep cooking while it's standing.

What kind of pan is best for frittata? ›

The food site also specifically recommends a properly seasoned cast iron skillet for this task. Not only will its all-metal construction make cooking in the oven a worry-free feat, but it will also add to the quality of the frittata.

What to pair with frittata? ›

Frittata Serving Suggestions

If you're serving your frittata as part of a bigger brunch, mimosas, classic french toast, banana bread, pancakes or muffins, French toast, baked oatmeal, overnight oats, blueberry scones, or fruit salad would all be great choices to go with it.

What is the frittata ratio to memorize? ›

The egg to dairy ratio: If you are making a smaller frittata use 6 eggs and 1/4 cup of dairy, and if you are making a larger frittata use 12 eggs and 1/2 cup of dairy.

What if the middle of the frittata is not cooked? ›

If the center is still liquid, you've got to cook longer. If it's almost set, cook the frittata a few more minutes, then remove it. As long as the frittata is still in the hot pan, it will continue to cook. That's why it's important to pull the dish from the oven as soon as it reaches that "set" stage.

Should a frittata jiggle? ›

Keep an eye on your frittata while it's in the oven.

Bake until the eggs are puffed and opaque, and the center of the frittata jiggles just a bit when you give it a gentle shimmy.

How do you keep frittata from going flat? ›

Forgetting to add milk or cream.

Without this important addition, frittatas cook up flatter and a bit more dense. Follow this tip: After whisking the eggs together, be sure to whisk in some milk or cream. As a rule of thumb, use 1/4 cup of dairy for every six eggs.

How do you keep eggs fluffy? ›

Add Moisture and Mix

Since dryness leads to dense, chewy eggs, this is a chance to boost your eggs with some extra moisture. Adding approximately 1 tablespoon of liquid per egg—milk or cream are delicious, but water works, too—will help create steam and keep the scrambled eggs moist.

Should a frittata puff up? ›

As the frittata bakes, the eggs will expand and puff up. That can leave them with a spongy texture that's dry and unappealing. You want to combine the eggs well, but stop once everything is fully incorporated.
