Is breakfast your favourite meal of the day? I cant decide if it is or isn’t for me, all I know, is I am a hungry girl, I want to eat all day, every day, try and stop me! Especially since going plant based, I just go through food like the Cookie Monster goes through cookies. Can you tell I haven’t even had breakfast yet? I might make one of these today, this is my favourite week of vegan and alkaline breakfasts.

I always add mixed seeds to my breakfasts for extra nutrition and texture, they are all optional in these recipes, as they’re not necessary for the taste, just for some goodness. The recipes are all to serve on person. One hungry person, I do big portions. For the recipes with spinach, I add spirulina too, you can add this and/or wheatgrass powder to most recipes too, but I find the taste of wheatgrass to be really strong. Mix up the recipes to add in your fave supplements and see how it goes.

Banana Pancakes

Probably the number one favourite breakfast, but to be honest I can’t ever make these, so usually get someone else to do them, because I am not as seasoned at pancake making as Matilda.

Recipe

1 very ripe banana

1 cup of oats

1/2 cup of plant milk

Tablespoon of cooking oil

Choice of toppings (favs are peanut butter and chocolate chips, or blueberries, strawberries and agave).

Method

Blend the oats and half of the milk together, smash the banana in a bowl then combine the mixture. If it seems too thick add some more milk, it should be pourable but thick like a cake batter. Let it sit for a few minutes, while you heat the frying pan with some oil of your choice (I prefer rapeseed for frying). Add one ladle full to the pan, it shouldn’t fill the pan but look like Matilda kinda pancakes. Don’t forget to flip! They should be golden brown on both sides and about 1/2cm thick. Add your toppings and enjoy!

Apple Pie Overnight Oats

These can be eaten hot or cold, if you want them to be hot, you can use a slow cooker, or heat them in a pan after the recipe has soaked all night. This is a really tasty recipe that tastes quite cakey, it makes a great family breakfast.

Recipe

half cup of oats

half cup of milk

half an apple

dash of cinammon

dash of vanilla extract

teaspoon of choice of sweetener, maple or agave the best

Method

Chop the apple in to small chunks, the smaller the better if you want to use a cute mason jar like this. Combine all the ingredients and make sure you mix it well. If you’re having it cold, just pop it in the fridge overnight, or for hot leave it on a low heat in a slow cooker, or just heat in a pan the next day. So quick, easy and tasty.

Kiwi Tropical Smoothie Bowl

Recipe

1 frozen banana

1 cup of frozen or fresh mango

1/2 cup spinach

2/3 cup of water

1 kiwi

2 tbsp ground almonds

mixed nuts and seeds of your choice

Method

Blend the mango, banana, water and spinach. It should be quite thick and not too runny. Pour this in to your bowl, and top with chopped kiwi, ground almond, nuts and seeds.

Chocolate and Peanut Butter Porridge

My second favourite recipe after the pancakes. I absolutely love chocolate and peanut butter, especially together all hot and melty. This is a great rainy day, cosy kinda breakfast. One pot recipe everything all thrown in to make a gooey bowl of deliciousness.

Recipe

1 cup of oats

1 cup of milk

1 banana

1 tbsp peanut butter

mixed seeds of your choice

dash of vanilla extract

sprinkle of sultanas

tbsp chocolate chips

Method

Mix the oats with milk, seeds, vanilla extract, and chopped banana. Heat on low until it starts to thicken, stir in the peanut butter while it’s still cooking. Serve with sultanas and chocolate chips on top. You can have the banana cold and sliced on top if you prefer instead of cooking it into the porridge.

Berry Smoothie

I love this one because it’s so quick and tasty, with minimal washing up. Really good for an on the go breakfast, I add vanilla to give it a more milkshake type of taste, the added oats help with this too they make it creamier.

5 frozen blueberries

5 frozen strawberries

5 frozen cherries

2 tbsp of oats

1 tbsp of seeds of your choice

dash of vanilla extract

2 dates

1 cup of milk

Method

Pop all the ingredients in a blender, wizz up until smooth and enjoy!

Coconut Tropical Smoothie Bowl

I love this because it’s so exotic. There is a mix of tastes and textures. and it is full of goodness! This is a gorgeous breakfast for a hot summers day.

1 frozen banana

1 cup of frozen pineapple

1/2 cup of spinach

mixed seeds of your choice

1 cup of coconut water

handful of mixed nuts

sprinkle of dried coconut

Method

Blend the water with spinach, pineapple, banana and seeds until smooth. Pour this in to a bowl and top with nuts and coconut.

Chocolate Milkshake

Another favourite of this lazy girl. Throw it all in a blender and you’re done. Tastes like heaven, FULL of goodness your body will thank you for.

1 tbsp of cacao

2 tbsp of oats

3 dates

handful of cashews\

1 tbsp of chocolate chips

mixed seeds of your choice

dash of vanilla extract

Method

It’s another all in the blender recipe! Whizz this up until its thick and creamy like a proper milkshake. It is delicious, tastes so naughty but full of goodness.
